Mañío Extra Brut

Mañío Extra Brut is named for the mañio tree, a native evergreen found in the temperate rain forests of southern Chile. The base wine is a traditional blend of Chardonnay and Pinot Noir, both from our vineyard in the Andean foothills of the Maule Valley, and it is aged for 18 to 24 months on the yeast lees after the second fermentation in the bottle. Bright citrus aromas combine with a creamy note, reminiscent of lemon curd or lemon meringue pie, underlain with green apple, green apricot, and just a touch of flint. The bottle aging adds a touch of fresh baguette. The wine is finished as an Extra Brut, with a light dosage of 4–6 grams of sugar, making it ideal for food pairing.
