Mañío Chardonnay

The Mañío Chardonnay is from El Radal vineyard near the Río Longaví. This cold zone of the pre-mountain range of Maule Valle is suitable for the production of whites with good acidity. The grapes were harvested by hand in the cool morning hours, whole bunch pressed, and barrel fermented. After fermentation, the wine was barrel aged for 18 months with their lees to stabilize from natural cold. We treat with bentonite to stabilize by heat and help settling. Note that the wine was only racked from its solids and bottled without filtration, so that crystals of tartar can be precipitated that are part of the natural evolution of wine.
