Magnolia Extra Brut

Magnolia was born when a neighboring vineyard offered to sell their old-vine País (Mission) grapes to Fernando Dussaillant in 2014. The early harvest of this traditional variety maintains its green peach and dried strawberry notes. País is not known for its acidity, so Chardonnay is blended into the final cuvée to balance the palate, with a little light-press Pinot Noir to increase complexity and richness. This sparkling wine ages on the lees for 18 to 24 months. Given its lower acidity, the wine is finished as an Extra Brut, with a dosage of 4gr. of sugar/l.
