Jardín de Edén Brut

Jardin de Eden Cuvee 2 is a blend of free-run and lightly pressed lots, with a base of Pinot Noir complemented by Chardonnay. The inclusion of lightly pressed lots and the use of Pinot Noir as the base provide richness on the palate, with notes of strawberry and red apple.

The Chardonnay adds complexity and bright acidity. This vibrant cuvée ages 18 to 24 months on the lees before being decanted and disgorged. The bottle aging adds toasted notes that round out and complete the wine. This Brut is finished with a dosage of 8–10 grams of sugar.
